Anyone who lives a gluten-free/grain-free lifestyle eventually starts missing the comfort foods they grew up with. Cakes, cookies, bread, pie crusts, pizza crusts and more are all recipes you can love again when made with coconut flour. I’ve used coconut flour for several years and was lucky enough to have Tropical Traditions send me a bag to experiment with.
Tropical Traditions organic coconut flour is made from the fiber of the coconuts after the oil has been extracted. The organic flour is gluten-free, high in fiber and protein. It’s also unsweetened and has not been treated with sulfates. Tropical Traditions, as a company, has made a commitment to family farms and go above and beyond the typical organic standards. They investigate the people behind the product to make sure they met up to their high standards. They carry a variety of organic food, skin care products, pet products and more. If you are a new customer and sign up through my link you get a Free copy of their Virgin Coconut Oil book.
Now on to making something yummy. My sister-in-law’s birthday is today and I wanted to whip up something for her. Who am I kidding, I wanted to make some carrot cake for me. After a little time, baking magic and coconut flour I came up with the following Coconut Flour Carrot Cupcakes.
Looks good doesn’t it. I managed to make it out of the house without eating more than 3 2, so I consider it a success. For even more recipes you can check out their recipe blog.
